A child will become a healthy and daring eater if they are encouraged to try all foods. Although at some ages, young ages, your doctor may restrict certain foods from their diet. But once they are allowed by a doctor to 'try it', the real fun begins! Be careful not to make faces or verbal judgements on the food before they try it, and by all means, if they see you eat it and willing to try anything, chances are, they will. NOTE: if you suspect or know of an allergy, you will need to educate the child and those around them, to ensure the child never eats the allergen!

BREAKFAST SMOOTHIE

Ingredients: Yogurt, fruit, milk or juice

We have a single blend cup blender, ours is the Bella Cucina sold at Target. It makes all the difference in the morning. The blender turns into a cup after you blend it. And it also makes it easy for individual smoothies. Start with yogurt, we prefer non fat vanilla yogurt. Add frozen or fresh fruit. Adding frozen fruit will make it more like a milkshake consistency. Then add a liquid, such as milk, orange juice or any other juice you like. This will help it become loose enough to blend well and it won't be too thick to drink through a straw. You can get creative and add other items such as wheat germ or ice ( if it's not cold enough). After it is blended and the consistency is just right, you simply unscrew the blender blades and put a cup ring around the top. It is not a lot to clean up or wash and it's very nutritious and filling!

♥Valentine's Day is on it's way. A season of all things romance, love and chocolate. Anything chocolate, from a box of chocolates to homemade fudge, are always a great Valentine's treat.  You can buy chocolates in any shape or size, from inexpensive to wildly expensive. Choices from Hershey's to Godiva, chocolates with pictures 'painted' on them, chocolates in any shape with any filling. Similarly, fudge you can make or buy in all different flavors and in any shape imaginable. Fudge is not difficult to make and tastes divine. We will share our easy chocolate fudge recipe. It is delicious, easy to make, and is an unforgettable treat!

EASY Chocolate Fudge Ingredients and Instructions:

3 cups (18 oz.) of Semi-Sweet Chocolate Chips

14 oz. of Sweetened Condensed Milk

Dash of Salt

1 1/2 tsp. of Vanilla Extract

Line 8 or 9 inch pan with wax paper; Melt chocolate chips with sweetened condensed milk and salt in heavy saucepan; Remove from heat; Stir in vanilla; Spread evenly in prepared pan; Chill 2 hours or until firm; Remove from pan by lifting edges of wax paper; Peel off paper; Cut into squares or use cookie cutter to cut into shapes; Enjoy!

When giving fudge to anyone, presentation makes an impression. If you are serving at your home, use a special Valentine's decorate plate and/or doily. If you are giving the fudge to that special someone, use a decorative box or wrap it in parchment paper and then wrap it up as a gift. I love to use brown paper, with ribbon and flowers (real or artificial).
